This new variant of Tokwa at Baboy will make you finish bowls and bowls of rice. The addition of pineapple juice enhanced the flavor of this dish and the added tokwa adds a healthy factor.
Tofu can easily be found in the supermarket or in the nearest wet market near you. Start by chopping your tofu into squares then toss them into a well-oiled hot pan.
Fry for a few minutes until golden brown and crispy. Make sure to stir so that all sides will have that beautiful golden brown color. Once tofu are cooked, remove from the pan and set aside. Use the same oil and saute minced garlic until browned then add and saute the chopped onions.
Add the pork belly next and saute until it browns. Once it browns add the soy sauce and let it cook until the liquid reduces to half. This way, your pork will be flavorful.
Add the vinegar and pineapple juice next, stir then cover the pan with the lid. This way, the flavor comes together and it’ll boil quicker. Cook this low heat for 40 minutes then add the salted black beans. Let it boil for 35 minutes then add brown sugar. Add water if the sauce gets reduced so that the pork will get tender.
Now here’s the secret ingredient. Add star anise to add aroma and flavor to the dish. Just let it sit and boil for 5 minutes then remove it.
Once the pork is tender, add the fried tofu we’ve set aside earlier and then add some ground black pepper.
This dish is best served with chopped parsely on top or chopped spring onions. Eat with hot white rice and enjoy!
